This puts the P in PIIGS. (Lisbon, Portugal)

In case you don't get the joke, the PIIGS nations (Portugal, Italy, Ireland, Greece, Spain) are those that are struggling the most financially in the EU. International Relations major joke...

To say the least, Portugal has been one of my favorite spots thus far! The first day Bronwyn, Katie, and I walked ALL up and down a few miles of the coast right next to the ship. We then proceeded to spend the afternoon basking in the sun on a local beach in a nearby place called Cascais. And yes mom and dad, I was wearing at least 50 SPF! Don't worry.

The second day I spent the late morning and the early afternoon in an AMAZING cooking class. Alongside many Lifelong learners and some other S@S students, I learned to cook some original Portuguese dishes. One of them was a stew that consisted of potatoes, peppers, onions, garlic, white wine, olive oil, clams, prawns, and cod. The other was a dish that included apples roasted in olive oil and rosemary and these meatballs from a turkey and chicken sausage. We were also served different local cheeses with breads, and our glasses were constantly filled with delicious local wines. They served us a dessert that had some Portuguese chocolate mousse, a dark berry crumble, an egg yolk based dessert, and port wine. All in all, it was an incredible experience in which I learned a lot about the culture and the gastronomy of the Portuguese.

That afternoon, I went out on the town with Bronwyn and Katie. We roamed around Lisbon, and they showed me all the major sites that they had already stumbled upon. That evening we went to Castelo de S. Jorge to see the sunset, a recommendation of everyone that had been to Lisbon. Of course, it was absolutely stunning and I'm so glad we went.

The last day, the three of us went to a little nearby called Sintra. We walked up and around the entire ancient city and admired the beautiful handiwork of the artisans there. It was filled with tiny allies and cobblestone streets, and most shops in the city display beautiful arrangements of tiles that were hand done. Yet another gorgeous, historical city that we got to witness. If you don't know it, I would highly recommend looking it up and admiring the pictures.
